Paper Cabbage from El Vallès

Sweet and delicate with leaves of a color similar to green and blue, oval and with a particularly thick central nerve, col de Paperina (Paperina cabbage) offers a soft and sweet taste. Originally from vallès Occidental, its cultivation is delicate as they are very vulnerable to butterfly eggs and is smaller than other cabbages. Also called Easter cabbage, it is elongated and can exceed 100 centimeters in height. This means that the leaves are not tight and, therefore, the final product is of higher quality. It has a very short season during the peak of winter, between the months of November and January, which prevents the existence of numerous points of sale. Scarce but highly appreciated, Paperina cabbage owes its name to its shape, paperine, and is very rich in vitamins and minerals, apart from providing a wide variety of essential nutrients for our body.
