Liver bread is a traditional cooked sausage, typical of the Catalan Pyrenees and the Cerdanya region. Similar to rustic country pâté. Made with pork belly, head meat, lean meat, jowl, cracklings, pork fat, pork liver, eggs to homogenize the mixture, salt, garlic, parsley, black pepper, and spices. It is characterized by its tender and melt-in-your-mouth yet firm texture, intense flavor, and loaf-like shape. Highly prized in Catalan cuisine, it is commonly eaten cold or at room temperature on toast, grilled, or in sandwiches. It is an energy-rich food, high in iron, vitamins A and D, and protein.
