Artisan longaniza is a very popular sausage in Catalonia, if not the most popular. It is made using lean pork loins, shoulder cuts, and hams, trimmed of fat and sinew. The meat is minced and seasoned with salt and pepper. It is stuffed into casings and dried in drying rooms to cure, a process during which fermentation occurs and molds appear, giving it its characteristic color and aroma.
