"Carquinyolis" are traditional Catalan sweet biscuits, both dry and sweet. Those made in Espluga de Francolí and Caldes de Montbui are particularly noteworthy. They are made primarily with eggs, milk, flour, and almonds, but each baker adds their own personal touch. The resulting dough is shaped into elongated logs, baked, and cut into small pieces. They have a hard, crunchy texture and a distinct almond flavor. They are typically eaten on their own or as an accompaniment to tea, coffee, sweet wines, or liqueurs.
