This vegetable owes its name to its cultivation method. They are white onion sprouts, replanted and periodically covered with soil as the plant grows, covering it. The result, once harvested, is a sprout between 15 and 25 cm long, white, tender and with a mild, sweet flavour. Protected by the PGI, its cultivation and harvesting method is guaranteed.
It is a typical vegetable in Catalan cuisine and is cooked on the grill directly over the fire until it is charred. It is eaten with a sauce similar to romesco.
