Cabell d'Angel escarole, the most prized and popular of the endives. This is the Chicorium Endividae variety, with thin, curly leaves. Its main characteristic is its mildness and low bitterness. Ideal for salads and famous for being the main ingredient in the typical Catalan dish Xató.
Perruqueta del Garraf escarole, smaller and sweeter than the others. Ideal for salads and accompanying fish.
